250 g (8 oz) peeled watermelon, deseeded and diced
100 g (3½ oz) feta cheese, diced
2 generous handfuls of rocket
handful of mint leaves
4 teaspoons olive oil
juice of ½ lemon
salt and pepper
Dry-fry the sesame seeds in a small, nonstick frying pan for 2 minutes until aromatic, stirring continuously, then set aside.
Arrange the watermelon and feta on a large serving plate with the rocket and mint.
Place the dressing ingredients in a screw-top jar, season with salt and pepper and shake to combine. Drizzle over the salad, scatter with the toasted sesame seeds and serve.
