Chicken Salad Pita

Leftover chicken is ideal for this recipe, but it’s delicious with canned chicken also. Simple sides like chips and an apple complete the meal.

 

 

1. Mix the chicken, celery, almonds, and bacon bits in a bowl.
 
2. In another bowl, mix the mayonnaise, lemon juice, and pepper.
 
3. Stir the mayonnaise mixture into the chicken mixture.
 
4. Spoon into pita pockets.

 

 

Ingredients:

2 cups cooked, chopped chicken meat
1/2 cup chopped celery
1/4 cup sliced almonds
1/4 cup bacon bits
1/2 cup light mayonnaise
1 tablespoon lemon juice
1/4 teaspoon pepper
Pocket-style pita bread
