Egg Salad

The following is a delicious, basic recipe for reduced fat egg salad that is great with crackers or in a sandwich or pita pocket. Add chopped pickle, celery, or green onion, according to your kids’ taste. This lighter ranch dressing is a favorite alternative to the bottled kind for dipping.

 

 

1. Place eggs and egg whites in a bowl, and chop up with a fork.
 
2. Mix in mayonnaise, mustard, salt, pepper, and any optional ingredients.
 
3. Spoon into a container, and sprinkle on paprika to serve with crackers, or stir in paprika and make a sandwich or pita pocket.

 

 

Ingredients:

5 hard-boiled eggs
5 hard-boiled egg whites
1/2 cup light mayonnaise
1 tablespoon mustard
Salt and pepper to taste
1/8 teaspoon paprika

 

Homemade Ranch Dip

 Whisk all the ingredients together in a bowl. Store in sealed container in the refrigerator.

 

Ingredients:

1 cup light mayonnaise
1/2 cup light sour cream
1 teaspoon chopped parsley
1 teaspoon chives
1 teaspoon dill weed
1/4 teaspoon garlic salt
1/4 teaspoon onion powder
1/8 teaspoon black pepper
