Fiesta Salad

If you’re cooking quinoa, couscous, or rice as a side dish for dinner, make an extra cup or so and reserve it for this healthy, colorful lunch dish. Throw it together after dinner, and it’s ready to go in the morning. Leftover angel food cake is a perfect dessert to turn into a new treat the next day.

 

 

Mix the quinoa, couscous, or rice with the olive oil and lime or lemon juice. Stir in the rest of the ingredients.

 

Ingredients:

2 cups cooked quinoa, couscous, or rice, cooled
1 tablespoon olive oil
Juice of 1 lime or lemon
1/2 cup kidney beans or black beans
1/2 cup corn kernels
1/2 cup diced red pepper

 

Angle Food Cake Kabob

 

Spear chunks of angel food cake and strawberries, or other fruit, on toothpicks. Serve with a small container of chocolate syrup for dipping.
