Mac and Cheese Cups

This leftover trick works well with almost any leftover pasta, but macaroni and cheese is a favorite at our house. Another favorite are S’mores cookies, but these are a special once-in-a-while treat, because no one can resist gobbling them all up.

 

 

1. Preheat oven to 350 degrees. Spray muffin tin with non-stick spray.
 
2. Cut the eggroll wrappers into 4 squares, so you have 8 squares total.
 
3. Line the muffin cups with the wrappers.
 
4. Stir the pasta, egg, and peas together. Spoon into eggroll-lined cups.
 
5. Bake until set, about 15 minutes.

 

 

Ingredients:

2 large eggroll wrappers
1 1/2 cups leftover macaroni and cheese or other pasta with sauce
1 egg
1/4 cup peas

 

S'mores Cookies

 

1. Preheat oven to 375 degrees.
 
2. Mix butter, brown sugar, vanilla, and eggs together.
 
3. Add the flour, graham cracker crumbs, baking soda, and salt, and mix well.
 
4. Stir in 3/4 of the bag of chocolate chunks.
 
5. Drop the batter by the tablespoonful on an ungreased cookie sheet. Bake for 7 minutes, and take out of the oven. Press mini marshmallows and remaining chocolate chunks into the cookies.
 
6. Return to oven and bake for another 3–4 minutes until cookies are done and marshmallows are golden.

1 cup butter
1 1/2 cups brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 cup graham cracker crumbs
1 teaspoon baking soda
1 teaspoon salt
1 package semi-sweet chocolate chunks
1 cup mini marshmallows
