Mini Humus Sandwich

Hummus on mini French bread slices with lettuce is a nice break from regular lunch fare. You can use prepared hummus from the deli, or make your own. Serve with cheddar cheese, applesauce with  Homemade Granola, and vegetables with ranch dip.

 

1. Put the first six ingredients in a food processor. Blend until smooth. Store in an airtight container in the refrigerator.

2. Spread on baguette slices, and top with lettuce.

 

Ingredients:

2 cups canned garbanzo beans, drained
1 clove garlic
1/3 cup tahini (sesame paste)
1/4 cup lemon juice
1 teaspoon salt
Pinch of paprika
Small French bread baguette, sliced
Romaine lettuce
