Yogurt Parfait

A yogurt parfait is a delicious alternative to an everyday lunch, but make it even better with homemade granola. Once you try the homemade version, you won’t go back to packaged!

 

 

1. Stir some honey or brown sugar into plain yogurt, or place two cups of yogurt in a blender with half a banana and blend until smooth.
 
2. Layer fruit and yogurt in a tall container.
 
3. Serve with a separate container of granola to sprinkle on top.
 
 

 

 

Ingredients:

Plain yogurt
Honey, brown sugar, or banana
Fresh fruit, cut up

 

Homemade Granola

 

1. Preheat oven to 300 degrees.
 
2. In a large bowl, combine the oats, coconut, almonds, brown sugar, salt, and cinnamon.
 
3. In a saucepan, stir the honey, oil, and vanilla over low heat until warm.
 
4. Pour the honey mixture over the oat mixture, and stir to evenly coat.
 
5. Spread the granola on a baking sheet. Bake about 20 minutes, stirring once or twice.
 
6. Cool the granola completely, and stir in the dried cranberries. Store in airtight container.

4 1/2 cups old-fashioned oats
1/2 cup coconut
1/2 cup sliced almonds
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup honey
1/4 cup vegetable oil
1 teaspoon vanilla
1 1/2 cups dried cranberries
