1. Preheat oven to 300 degrees.
2. In a large bowl, combine the oats, coconut, almonds, brown sugar, salt, and cinnamon.
3. In a saucepan, stir the honey, oil, and vanilla over low heat until warm.
4. Pour the honey mixture over the oat mixture, and stir to evenly coat.
5. Spread the granola on a baking sheet. Bake about 20 minutes, stirring once or twice.
6. Cool the granola completely, and stir in the dried cranberries. Store in airtight container.
