Amaretto Millet

This bowl reminds me of cherry cobbler. Black cherries are sweet and delicious on their own. They are also rich in antioxidants and vitamin C. When fresh cherries are available, they are great in this recipe—if you have the patience to pit them.


  • 1 cup cooked millet
  • 1 cup fresh or frozen and thawed black cherries
  • 1 cup nut milk of choice
  • 1 tablespoon honey or a pinch of stevia, to taste
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon amaretto extract
  • Pinch of sea salt
  • Chopped walnuts, almonds, or hazelnuts (optional)
  • In a small saucepan on low heat, stir millet with remaining ingredients except nuts until all

    the flavors are combined. You will warm for approximately 2 minutes. Do not boil nut milk. The milk will make this dish creamy. If you prefer a dryer cereal, reduce the amount of milk. Serve with chopped nuts for garnish.
