Avocado Crème Fraîche is another staple in the raw food kitchen. It can substitute anything from ranch dressing to mayonnaise to sour cream. Adding fresh herbs is a great way to get creative.
3 avocados, peeled and pitted
Juice of 1 lemon
1 tablespoon olive oil
1⁄2 tablespoon miso
apple cider vinegar
1 date (optional)
Water, if needed to blend until smooth
Sea salt, to taste
Blend all ingredients until smooth. Serve with crudité or vegetable chips.
