• 1 tablespoon chia seeds
• 1 tablespoon buckwheat
• 1 tablespoon pumpkin seeds
• 1⁄2 tablespoon hemp seeds
• Pinch of sea salt
• 1⁄2 cup nut milk of choice (page 83)

• Stir all ingredients together. Allow to soak for 20–30 minutes. Serve with

  fresh fruit and additional nut milk as a cereal.

Chia is the new miracle seed. It has gained a lot of popularity in health food circles, and we think it is here to stay. Chia is rich in omega-3 fatty acids. It is a very stable seed, so it doesn’t go rancid quickly. Unlike flax seeds, they don’t need to be ground to make their nutrients available. This is an easy, simple breakfast. Feel free to add chopped fruit, spices, or nuts.
