Cinnamon-Scented Quinoa and Walnuts

Quinoa makes an amazing breakfast cereal. If you make too much for dinner, it is perfect as a leftover breakfast. Add whatever fruits and spices you like—this just happens to be a favorite combination of mine.


  • 1 cup cooked quinoa
  • 1 teaspoon cinnamon
  • 1⁄2 cup walnuts, chopped
  • 1 vanilla bean, scraped or 1 teaspoon vanilla extract (optional)
  • 2 tablespoon raisins (optional)
  • 1⁄2 tablespoon honey, or a pinch of stevia, to taste
  • Pinch of sea salt
  • 1⁄2 cup nut milk of choice (page 83) (optional)
  • 1 cup fresh fruit of choice (apple, pear, plum, banana, etc.)
  • Stir all cereal ingredients together. Top with nut milk and fresh fruit.
