• 1 fennel bulb, trimmed and thinly shaved on mandolin
• 1 grapefruit, peeled and cut into segments
• 2 cups arugula
• 1 tablespoon thyme
• 1⁄4 cup cured olives, pittedand finely chopped
• 1 tablespoon olive oil
• 1 tablespoon lemon juice
• Sea salt, to taste

• Toss all ingredients together and allow to marinate for 15 minutes before serving.
