Fennel and Zucchini Velouté with Tomato Seed “Caviar”

Dill is always a flavorful addition to any dish. Dill has a bright, sweet, and slightly tangy flavor that makes it very refreshing. Like many other spices, dill is rich in volatile oils that contain antibacterial qualities. Surprisingly, dill is also high in calcium. The combination of flavors in this soup is very Mediterranean. You could also forgo the caviar and drink this as a smoothie!


  • 2 large fennel bulbs, juiced
  • 1 lemon, juiced
  • 2 cups peeled and chopped zucchini
  • 2 tablespoons fresh dill
  • 1 tablespoon olive oil
  • 2 tablespoons miso
  • 1 large avocado, peeled and pitted
  • Salt and freshly ground pepper, to taste
  • 4–5 tablespoons of the interior of a fresh (preferably heirloom) tomato
  • Assembly—Blend fennel juice with all ingredients except for avocado until smooth.

    Add avocado and blend until creamy. Salt and pepper, to taste. Garnish with optional tomato seeds and additional fresh dill. Drizzle with a little olive oil and freshly ground pepper to finish.
