Stock—Blend all ingredients together until smooth.
Shiitakes—Marinate mushrooms with oil, nama shoyu, and lemon juice. Allow to marinate for at least 15 minutes. Assembly—Before serving, stir shiitakes and vegetables into stock. If desired, garnish with bean sprouts and gamashio before serving.
