Papaya dressing is a take on the classic poppy seed dressing. Papaya is rich in digestive enzymes, antioxidants, and hydrating mineral properties. This salad is easy to like and super refreshing.
1 cup chopped fresh papaya, reserve 3 tablespoons seeds
1 tablespoon dry mustard powder
1⁄2 cup lemon juice
1⁄2 cup lime juice
11⁄2 teaspoons sea salt
1 cup olive oil
1 head Bibb lettuce, gently rinsed, stem removed, and torn into large pieces
1 tablespoon chopped tarragon
1 tablespoon chopped thyme
Salt and freshly ground pepper, to taste
Dressing—In a blender or food processor, blend the papaya, mustard powder,
juices, and salt until smooth. With the motor running, add the oil in a stream and blend until the dressing is emulsified. Add the papaya seeds to the blender and blend until the seeds are finely ground Assembly—Gently toss lettuce with dressing. Garnish with fresh herbs. Season with salt and pepper, if desired.
