This smoothie can be blended all together for a delicious pink smoothie or you can serve it in layers like we did for the photo just for fun. Either way it is uniquely delicious and nutritious. Pineapple is one of our favorite tropical fruits.
2 cups fresh or frozen pineapple chunks
1 cup frozen cherries
1⁄2 cup young coconut meat (optional)
11⁄2 cups coconut milk (page 86) or nut milk of choice (page 83)
1 (1-inch) chunk ginger, peeled
1 tablespoon coconut butter
1 teaspoon cinnamon
1 teaspoon vanilla extract
1⁄4 cup shredded coconut (optional)
Pinch of sea salt
Blend all ingredients until smooth.
To layer, blend half of the smoothie without cherries and half with them and then layer with shredded coconut.
