This is a funky dish for a dinner party. It is easy to make and fun to eat. Hot pink and bright green screams fresh and the flavor holds up to its fresh look.
1 medium-size seedless watermelon
3 avocados, peeled and pitted
1⁄2 cup lime juice
1⁄4 cup agave or coconut nectar
1 teaspoon vanilla extract
Pinch of salt
Cut watermelon into 1-inch cubes. This should make about 2 dozen cubes. Freeze overnight.
Avocado Mousse: Blend all ingredients until smooth. Assembly: Serve this dish fondue style with watermelon on skewers or with small forks, and the avocado mouse as a sweet dip. Alternatively, you can serve it plated with cubes of watermelon topped with small dollops of avocado mousse.
