Mushrooms always make a satisfying substitution to meat. This pâté is equally delicious to its meaty counterpart. White mushrooms don’t often get many health points, but they are a rich source of antioxidants and minerals.
3 cups white mushrooms, stems removed
1⁄4 cup sunflower seeds, soaked and drained
2 tablespoons white miso
2 tablespoons olive oil
Juice of 1 lemon
1 cup parsley, chopped
2 tablespoons fresh thyme
Sea salt and pepper, to taste
Process mushrooms, seeds, miso, oil, and lemon in the food processor until
smooth. Stir in parsley and thyme. Salt and pepper, to taste. This is delicious served with crudités or sprouted grain crackers or toast.
