Pineapple contains bromelain, an enzyme that aids digestion and is very similar to stomach acid. It is also meant to be highly effective at dissolving blood clots. The only downside is that it is not very kind to tooth enamel and is better if drunk diluted. Celery is the perfect accompaniment as it also aids digestion and lowers blood pressure. This juice is good for re-energizing, detoxifying the liver and replenishing lost fluids.
150 g (5 oz) pineapple
150 g (5 oz) celery
½ lemon, peeled
Juice all the ingredients. Serve over ice in a tall glass with some sprigs of fresh mint or fennel.
