This nourishing smoothie is rich in iron, calcium and potassium and high in beta-carotene. Add a handful of sunflower seeds to rev up the omega-3 levels. It will appeal to all the family, especially children, so maybe make extra as a perfect breakfast drink.
1 large carrot
100 g (3½ oz) banana
1 fresh or dried apricot
variation: swop banana for ½ small avocado
Juice the carrot and orange. Whizz the juice in a blender with the banana (or avocado, if that’s what you’re using), apricot and a couple of ice cubes.
