The vitamin A found in carrots is necessary for the proper functioning of the rods in the retina, which promote adequate night vision. When the rods inside the retina detect movement and dim light, rhodopsin is released, which splits into the protein opsin and the pigment retinal. Retinal is derived from vitamin A, and carrots do contain significant quantities of vitamin A.
