What did Judith say to Holofernes when she met him?

She told the truth when she told Holofernes that she was a Hebrew, and that she worshiped God. However, she lied and told him that the people of Judah were planning to eat animals that were banned by their dietary laws. She assured Holofernes that once the people did that, God would abandon them. Judith said God would let her know when that happened, and then she in turn would tell Holofernes. Then Holofernes could march right into Jerusalem and seize the city.
