What happens to proteins during a hair perm?

During a hair perm, the bonds that form the structure in the protein keratin (the major protein of hair) are chemically broken and then reformed; hydrogen bonds are primarily involved in this process. The same principle, breaking and forming bonds, is used to make hair either very curly or straight.
