What is fermentation?

Scientists have theorized that fermentation was the process through which energy was first gathered from organic compounds. Fermentation evolved before Earth’s atmosphere contained free oxygen, which occurred over 2.5 billion years ago. Fermentation is thus an ancient process and occurs normally in microorganisms that live in the absence of oxygen.
