What is the “human theory” of dinosaur extinction?

There is no such thing. The idea of humans living at the same time as dinosaurs seems to have been propagated by the B-movies of the 1950s and 1960s in which dinosaurs attacked humans. In reality, mammals did evolve about the same time as the dinosaurs, but the mammals were not human-like. The dinosaurs died out about 65 million years ago; the first hominids appeared about three to four million years ago; Homo sapiens sapiens (or modern humans) did not appear until about 90,000 years ago.
