The preferred wood for butcher’s blocks is the American sycamore (Platanus occidentals), also known as American planetree, buttonball, buttonwood, plane-tree, and water beech, because of its toughness. It is also used as a veneer for decorative surfaces as well as for railroad ties, fence posts, and fuel.
