What wood is the favorite for butcher’s blocks?

Because of its resilience, the preferred wood for making butcher’s blocks is derived from the American sycamore (Platanus occidentalis), also known as the American planetree, buttonball, buttonwood, and water beech. The wood of Platanus occidentalis is also used as veneers, for decorative surfaces, fence posts, and fuel.
