Blood Orange-Scented Beet Soup

If you don’t have blood oranges you can absolutely use regular ones, but blood oranges have an inexplicably delicious color and flavor that cannot be exactly replicated. This soup provides the full range of antioxidant, anti-inflammatory, and detoxification support.


  • 2 large red beets, peeled
  • 2 blood oranges, peeled
  • 1⁄2 stalk celery
  • 1 (1-inch) chunk ginger
  • 1⁄4 cup parsley
  • 1 avocado, peeled, pitted, and diced (reserve a few tablespoons for garnish)
  • 1 tablespoon olive oil
  • 1 tablespoon miso Pinch of salt
  • Pepper, to taste
  • Micro basil (optional)
  • Stock—Juice beets, blood oranges, celery, ginger, and parsley together.

    Soup—Place stock juice with avocado, oil, miso, and salt in a blender and blend until smooth. If you want to serve the soup warm, blend for at least 1 minute. Season with pepper. Garnish with diced avocado and micro basil, if desired.
