Stock—Juice beets, blood oranges, celery, ginger, and parsley together.
Soup—Place stock juice with avocado, oil, miso, and salt in a blender and blend until smooth. If you want to serve the soup warm, blend for at least 1 minute. Season with pepper. Garnish with diced avocado and micro basil, if desired.
If you don’t have blood oranges you can absolutely use regular ones, but blood oranges have an inexplicably delicious color and flavor that cannot be exactly replicated. This soup provides the full range of antioxidant, anti-inflammatory, and detoxification support.
