1 fennel bulb, trimmed and thinly shaved on mandolin
1 grapefruit, peeled and cut into segments
2 cups arugula
1 tablespoon thyme
1⁄4 cup cured olives, pittedand finely chopped
1 tablespoon olive oil
1 tablespoon lemon juice
Sea salt, to taste
Toss all ingredients together and allow to marinate for 15 minutes before serving.
