Quinoa with Cherries, Olives, Parsley, Avocado, and Lemon

Although most commonly considered a grain, quinoa is actually a seed relative of spinach and Swiss chard. We love to toss it in just about anything for an extra boost. This is one of our favorite quinoa bowls. Cherries, olives, parsley, and avocado are such a nutrient dense, delicious combination of flavors.


  • 1 cup quinoa, cooked and drained
  • 1⁄2 cup dried cherries, chopped
  • 1⁄2 cup cured olives, pitted and chopped
  • 1⁄2 cup fresh parsley, chopped
  • 1 avocado, peeled, pitted, and sliced into cubes
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • Freshly ground pepper, to taste
  • Assembly—While quinoa is still warm, toss all ingredients together.

    Allow to marinate for at least 10 minutes before serving so that the flavors combine.
