Should I document certain items I would like to have on my homeowners’ insurance policy?

It is a good idea to keep copies of receipts of big-ticket items, and record them on video, room by room, so that you have a record of what you own. Be sure to store this information in a fire/waterproof safe place. Your insurance company can provide you with specifics on documenting the purchase and ownership of such items.
