If this makes it to the ice cream maker you are lucky. It is great straight out of the blender as a peppermint mousse.
5 medium avocados, peeled and pitted
1⁄2 cup coconut water
1⁄2 cup agave, coconut nectar, or honey*
2 tablespoons coconut butter
1 tablespoon peppermint extract
2 teaspoons vanilla extract
Pinch of salt
1⁄2 cup cacao nibs (optional)
Blend all ingredients until smooth. Stir in cacao nibs, if desired. Process through an ice
cream maker according to manufacturer’s directions. *If you want to omit the sweetener, you can substitute 1⁄2 cup coconut water and add a few drops of stevia, to taste. This will make the texture icy, but it will still taste good.
